1 1/2 lb Squash (4 md)
1/4 c Olive oil
1 md Onion; minced
1 Green pepper; minced
2 cl Garlic; minced
4 Tomatoes; peeled, chopped
1 c Black olives;
- pitted, chopped
1 tb Basil
1 ts Oregano
Salt & pepper
Slice zucchini & saute in oil with onion, green pepper, and garlic
until tender. Add tomatoes and simmer for 10 minutes until liquid has
been reduced. Add olives and seasoning. Continue simmering for
15 minutes.
