4 c Mixed vegetables; chopped
2 ts Turmeric
4 ts Cumin; freshly ground
2 ts Garam masala
2 ts Chili powder
3 tb Oil; for sauteing
3 tb Lemon juice
1 tb Peanut butter
4 tb Tomato paste
3 tb Flour; up to 4 tb,
- dissolved in:
Water; cold
Salt; to taste
Select vegetables including carrots, parsnips, cauliflower, greens,
potato, okra, green peppers, Brussels sprouts, zucchini, eggplant,
and/or tomatoes.
Saute the vegetables and spices together for 5 minutes, omitting
softer vegetables. Cover with water to the top of the vegetables,
adding the softer vegetables, lemon juice, peanut butter, and tomato
paste. Simmer for 15 to 20 minutes, then add flour, stirring
constantly. Stir until thick, season wih salt, and serve.
