    Title: Home-made Horseradish
    Categories: Five, Condiments
    Yield: 10 Servings

    1 c Peeled, diced horseradish
    - root
    +=OR=+
    1 c Horseradish root; grated
    - on a box grater
    3/4 c White vinegar
    2 ts White sugar; OPT
    1/4 ts Salt

    In a food processor or blender, process horseradish root,
    vinegar, sugar and salt. Carefully remove the cover of
    the processor or blender, keeping your face away from the
    container. Cover and store the horseradish in the
    refrigerator.

    UDD NOTES: Do this outside or in a *very* well
    ventilated area. Same rules as processing chilies apply
    here. Do not touch *ANY* sensitive areas (eyes, nose,
    nether regions) until you are sure you have washed away
    or neutralised any "gotchas"

    Sugar is very optional. I don't use it but some folks
    got to have their "sweet".
