Title: Ada (Spicy Dal Pancakes)

1 c Rice
1 c Mixed lentils; any kind
1/4 c Urad dal or black gram
1 ts Fenugreek seeds
1/4 ts Asafoetida
1 c Spinach; chopped
1/4 c Cilantro; chopped
1 lg Onion; minced
1 ts Black pepper powder
1/4 c Oil
4 c Water
Salt; to taste
Soak rice in 2 cups of water. Soak mixed lentils, black gram, and
fenugreek seeds in another 2 cups of water. Both should soak for at
least 6 hours, or overnight. In the morning, wash, drain, and grind
the rice and dals separately in a blender, then mix together. Batter
should drop ibn lumps onto the skillet, as for uttapams.
To this batter, add the asafoetida, pepper, chopped greens, and salt,
and mix well. Heat a heavy-bottomed skillet and coat the bottom with
a little oil. Fill a large ladloe with the batter and spread it on
the skillet to form a pancake 1/4" thick and 6" in diameter. Sprinkle
a few drops of oil on top. Let it cook for about 2 minutes on the
side. When it is firm, deftly turn it over and cook the other side.
The color should be golden brown when done. Serve hot with Coconut
Chutney.
