6 Lamb shanks
2 cl Garlic; slivered
2 tb Cooking oil
3 md Onions; diced
2 c Tomatoes; peeled; drained
3 ts Salt
1 Bay leaf
1/2 c Water or dry red wine
3 md Zucchini; sliced
Insert garlic slivers into lamb shanks. Brown meat in cooking oil. Add
onions and cook until soft. Pour off excess fat. Add tomatoes,
seasonings, and liquid. Bake uncovered at 350?F in Dutch oven for
1-1/2 hours. Add zucchini and mix well. Add more water if necessary
and continue to bake 30 minutes more.
