    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: Chicken Burrito Skillet
    Categories: Poultry, Rice, Vegetables, Cgeese, Beans
    Yield: 6 servings

    1 lb Boned, skinned chicken; in
    - 1 1/2" pieces
    1/8 ts (ea) salt & pepper
    2 tb Olive oil; divided
    1 c Uncooked long grain rice
    15 oz Black beans; rinsed,
    - drained
    14 1/2 oz Diced tomatoes; drained
    1 ts Ground cumin
    1/2 ts Onion powder
    1/2 ts Garlic powder
    1/2 ts Chilli spice mix
    2 1/2 c Chicken broth
    1 c Shredded Mexican cheese
    - blend
    1 md Tomato; chopped
    3 Green onions; chopped

    Toss chicken with salt and pepper. In a large cast-iron
    or other heavy skillet, heat 1 tablespoon oil over
    medium-high heat; saute chicken until browned, about 2
    minutes. Remove from pan.

    In same pan, heat remaining oil over medium-high heat;
    saute rice until lightly browned, 1-2 minutes. Stir in
    beans, canned tomatoes, seasonings and broth; bring to a
    boil. Place chicken on top (do not stir into rice).
    Simmer, covered, until rice is tender and chicken is no
    longer pink, 20-25 minutes.

    Remove from heat; sprinkle with cheese. Let stand,
    covered, until cheese is melted. Top with tomato and
    green onions.

    Title: Creamy Baked Chicken w/Artichokes & Mushrooms
    Categories: Poultry, Herbs, Vegetables, Dairy
    Yield: 6 servings

    6 (4 oz) chicken breast halves
    - boned, skinned
    1 1/2 ts Paprika
    1 1/2 ts Dried thyme
    1/2 ts (ea) salt & black pepper
    14 oz Can artichokes packed in
    - water; drained
    1 tb Butter
    8 oz Sliced cremini mushrooms
    2 tb A-P flour
    3/4 c Chicken broth
    1/2 c Fat-free Half & Half

    Set oven @ 375?F/190?C.

    Place chicken in 13X9-inch baking dish. Combine paprika,
    thyme, salt, and pepper in small bowl; mix well. Reserve
    1 teaspoon seasoning mixture; set aside. Sprinkle
    remaining seasoning mixture evenly over chicken. Cut
    artichokes in half; arrange around chicken.

    Melt butter in large saucepan over medium heat. Add
    mushrooms and reserved 1 teaspoon seasoning mixture;
    cook and stir 5 minutes or until tender. Sprinkle flour
    over mushrooms; cook and stir 1 minute. Stir in broth;
    simmer 3 minutes or until thickened. Stir in
    half-and-half; cook 1 minute. Pour evenly over chicken
    and artichokes.

    Bake 30 minutes or until no longer pink.

    Makes: 6 servings

    Calories: 220 calories, Carbohydrates: 14 g, Protein: 29
    g, Fat: 6 g, Saturated Fat: 2 g, Cholesterol: 79 mg,
    Sodium: 425 mg, Fiber: 7 g

    It oxidizes too easily when heated and releases harmful free radicals. This can contribute to a variety of diseases, including dementia, cancer, and cardiovascular disease.

    This ain't burritos - but it is chciken:

    1.5 kilograms of potatoes, finely chopped. 200 grams of mushrooms, finely chopped. 1 carrot, finely chopped. 800 grams of meatballs or finely chopped chicken breast.. Mix. One whole onion. Place in a multicooker [ like this https://multicooker.com/uk/catalog/multicookers/smart-multi-cooker-redmond-skyc ooker-m92s/ ] and fill with water to the top. Turn on for 45 minutes at 100 degrees Celsius. When ready, throw away the onion.

    If I had that soer of problem Id get a chart such as my local hospital has
    to calculate insukin dosage after a glucometer reading. Hospital is the only place I have *ever* had insulin.

    Each case is different. I've gotten to 83 without the careful monitoring
    that you espouse. I drink zero sugar soft-drinks, no sugar in my coffee or
    mt tea (hot or iced). That's my major concession to my Type II. And esating Blue Bunny No Sugar Added I scream which an RD tipped me off to.

    Other than that I am fortunate to me able to be an omnivore.

    Title: Diabetic Lemon Chicken
    Categories: Poultry, Citrus, Vegetables, Herbs
    Yield: 4 servings

    Nonstick cooking spray
    1 lb Bone, skinned chicken breast
    - (4 pieces)
    1 tb Olive oil
    1 lg Lemon
    1/2 ts Onion powder
    1/2 ts White pepper
    1 1/2 ts Oregano


    Set oven @ 375oF/190oC.

    Tear off a piece of aluminum foil that's large enough
    wrap up all four pieces of chicken. Spray the aluminum
    foil with nonstick cooking spray (on one side only), and
    lay the chicken breasts on the sprayed foil. Drizzle
    with olive oil. Grate 1 tablespoon of lemon zest and set
    aside. Juice the lemon, removing the seeds. Pour lemon
    juice over chicken, then sprinkle chicken with lemon
    zest, onion powder, white pepper, and oregano. Fold the
    aluminum foil over the chicken and roll the edges of the
    foil together to make a sealed packet. Place packet on a
    jelly roll pan or in a large, shallow casserole dish.
    Bake 30 minutes. Remove from oven and carefully open
    foil, using tongs to remove chicken to serving plate.

    Serving size: One 4-ounce breast

    Calories: 195 calories, Carbohydrates: 3 g, Protein: 30
    g, Fat: 7 g, Saturated Fat: 2 g, Cholesterol: 96 mg,
