Title: Italian Fish Soup

Yield: 4 servings
14 oz Can Italian seasoned diced
- tomatoes
14 oz Chicken broth
1 sm Fennel bulb; chopped
Fennel fronds; garnish
3 cl Garlic; minced
1 tb Olive oil
1/2 ts Saffron threads; crushed
1/2 ts Dried basil
1/4 ts Red pepper flakes
8 oz Skinless halibut or cod
- fillets; in 1" chunks
8 oz Raw medium (U-40) shrimp;
- peeled, deveined
Combine tomatoes, broth, chopped fennel bulb, garlic,
oil, saffron, if desired, basil, and red pepper flakes
in slow cooker. Cover; cook on low 4 to 5 hours or on
high 2 1/2 to 3 hours, or until fennel is tender.
Stir in halibut or cod and shrimp. Cover; cook 15 to 30
minutes, or until shrimp is pink and opaque and fish
begins to flake when tested with a fork. Ladle soup into
shallow bowls. Garnish with chopped fennel fronds.
Yield: 4 servings
