Title: Barley & Sausage Gumbo

Yield: 4 servings
1 sm Onion; chopped
1 lg Bell pepper; cored, chopped
1 c Frozen sliced okra
1 md Rib celery; chopped
1 cl Garlic; minced
1 c Chicken broth
1 c Tomato purée
1/4 c Uncooked pearl barley
1 ts Dried oregano
1/4 ts Salt
1/4 ts Red pepper flakes
6 oz Chicken andouille sausages;
- sliced 1/2" thick
Place onion, bell pepper, okra, celery, and garlic in
slow cooker. Add chicken broth, tomato purée, barley,
oregano, salt, if desired, and red pepper flakes; stir.
Add sliced sausages. Cover; cook on LOW 5 to 6 hours.
Let stand 5 minutes before serving.
Yield: 4 servings
