1 tb Olive oil
1 1/2 c Chopped vegetables, such as
- spinach, kale, onion,
- mushroom, bell pepper or
- grape tomatoes
8 lg Eggs
1/4 c Whole milk
3/4 ts Salt
1/4 ts Garlic powder
1/4 ts Pepper
1/4 ts Ground mustard; opt
2 tb Minced chives; for serving
Set oven @ 400ºF/205ºC.
In a large oven-safe skillet, heat oil over medium heat.
Add vegetables; cook until crisp-tender, 3-4 minutes.
Meanwhile, in a large bowl, whisk together eggs, milk,
salt, garlic powder and pepper, and if desired, ground
mustard. Pour mixture over vegetables; cook 3-4 minutes
or until the bottom starts to set.
Transfer to the oven; bake 15-20 minutes or until egg is
fully set. If desired, garnish with fresh chives.
